After he gains experience in famous restaurant in Paris, Cannes or Basque Country, he runs his first restaurant at the age of 30. The bistro “le Troquet” opened in 1998 and, till 2010, it satisfied all the lovers of the brasserie atmosphere. In 2008, this hard-worker puts very high standards when he created the first Cantine. He picks every product himself and knows personally his providers. The Chef likes simplicity. He admits it: cooking is easy when you have the good products. The result? A Basque Country -inspired cuisine, simple and tasteful.
It’s in this Cantine, decorated has a typical Parisian brasserie that you can have the occasion to meet him all year long. Except during the Pamplona’s feria of course, where the Chief go chill with his friends. And what happens at Pamplona stays at Pamplona !
